My story is one of a deep love for nature, the rhythm of the seasons, travel and encounters.
As the grandson and son of a farmer, I learned at an early age from my father how to work the land, respect it and live at the pace it dictates. He was the one who taught me, from a very young age, how to sow, tend and harvest crops, and understand the value of a job well done and the patience and humility that nature demands.
For as long as I can remember, cooking has always played a central role in my life. As a child, I loved cooking, but above all I loved tasting, smelling and discovering new things.
My childhood tastes like my grandmother's apple pies and lilac fritters, my mother's veal blanquette and rice pudding, slow-cooked stews, roast pigeon, and my aunt's bouchées à la reine. My aunt was a true connoisseur of flavours who passed on her passion for French cuisine to me.
These memories, filled with sharing, conviviality and pleasure, still stay with me today. Fascinated by the richness and diversity of the produce that our land offers us throughout the seasons, I naturally chose to devote myself to cooking.
After obtaining my hotel management qualifications, I had the opportunity to work with renowned chefs around the world. These experiences shaped my culinary identity, broadened my palette of flavours and fuelled my curiosity. I developed an intuitive and sensitive style of cooking, guided by my emotions, memories and encounters.
Self-taught, I let my instincts guide me in imagining new creations, always respecting the product, the terroir and the present moment.
After running my own restaurant in the Caribbean for five years, I settled in Dubai, where I now share twenty-eight years of travel and gastronomic experiences through my SupperClub ‘L'Assiette’ — a unique culinary experience marked by authenticity, passion and generosity.
